I have to say, Hannibal in Hannibal by Thomas Harris
Cast: Gaspard Ulliel (of--course!)
Hannibal is hands down the most unique villian I've come across. My whole life I never thought anything more creepy than cannibalism. As for the movies, there good...the book...AMAZING!
